Breakfast/snack food: Sweet potato muffins.

Very easy to make, perfect for breakfast or snack food. Will keep you feeling full for longer!

Preparation time: 15mins

Cooking time: 45mins

Ingredients (makes 12 muffins):

175g wholemeal flour

400g peeled and grated sweet potato

5 eggs

3 tablespoons of cottage cheese

1 small onion finely chopped

25g grated parmesan/mature cheddar cheese



Line muffin tin with 12 muffin cases (I used case size 47.6mm x 31.7mm), pre–heat oven gas mark 5.  Combine and mix all the ingredients (leaving a bit of the cheese to one side) and season with a pinch of pepper and a very small dash of chilli.


Spoon the mixture out into the muffin cases, sprinkle the remaining cheese on top then put straight in the oven.


Delicious served warm or cooled.
